definatley the Bream baits 80mm raw prawn by scumline fishing tackle, absolutley redhot and probably the best plastic on market, not just for jacks but for anything that swims, they blow me away (so do the fish)!.

Squidgy fish 80-100mm, 4" hollowbellies or swimmerz. I like these for rolling through the snags. Otherwise flick around some powerbait minnow or flick baits at rocks/jetties.

I've tried 120mm wrigglers and things similar but I seem to get more attention on the above.

Talking

It really depends where you are fishing and what type of structure. T-tail swim baits work well in most areas when fishing floating structures but most plastics will work in areas like NQ or Cape due to the numbers of fish on each snag or section of bank. Most jacks hit your baits on a reaction bite so colour and style of bait is not as important as size of your bait and positioning of your bait into the structure. Jacks are a lot like the good old flathead - they will hit just about anything if you put it in front of there face.
