The stick blender grabbed a heap of those problem strands out of the mix

I just loosely followed Spoonta's directions -

about 300ml of beef stock
- 2 heaped table spoons of garlic/ginger paste
- the juice from half a lemon
- about a teaspoon of pepper

then blend the crap out of it - and syringe 100ml into the roast before cooking - then another 100ml half way through - (didnt end up using the last 100ml)

p.s - I also coated the out side of the roast with the mixture
