13 month oz trip

So we are due to leave mid December with caravan in tow n boat up top from the central coast Nsw.first heading north to Southport til 4 Jan for our annual Xmas break then it'll be a haul down south to Nsw south coast for the rest of Jan before hitting Vic in Feb,now where to stay is the biggy will want to chase black bream and also tour whatever is down that way prob for a month or so before jumping on the great ocean road to sa,what is here to chase in our boat this will take up March? before touring wa for 3 months as we make our way north I've pretty much got this covered on where n what to do for wa as we hit nt around July I wanna start chasing some barra so prob july in n around here and doing the rock trip n then back up to north Qld Sep oct through the cape which I'm sure there's an abundance of things to chase here November moving along down towards sunshine coast before setting up camp again at Southport for 6 weeks the middle of December where we will decide where we live.
What can we expect to find along the way bearing in mind we will have kids n we need to incorporate our experience s into their schooling n unfortunately it can't be all fishing,just a lot of it. Any and all info is welcome.
