Yeah If its crispy - I dont mind the rind - but if its slimey - I'm not into it.

So when I'm cooking bacon and eggs - I dont want to wait for the rind to get crispy, so its got to go

I should have mentioned the bacon and eggs go into a "Man Salad" and I am all about speed and efficiency.

I slap the bacon and eggs into into the fry pan first - then while thats cooking I cut my lettuce, tomatoes, onion, cheese and olives. Then when thats done, the eggs and bacon are both ready at the same time and get added to the salad.

Everything is timed down to the millisecond with not an extra second spent cooking than necessary. Its a thing of beauty to behold.

So while I'm well aware I could just put the bacon in first - it would throw out the timing, on the magnificent culinary symphony of efficient movement that is my "Man Salad"

As you can see from the photo's - a man who goes to the trouble of cutting the rind off in bulk, is working to some serious kitchen deadlines where a few extra strokes of the knife on the night, could spell disaster

I remember (fondly) when I was a young fellah my mum used to cut the rind off prior to cooking the bacon. Me and my brothers used to eat the rind raw whilst waiting for our eggs bacon and beans to get cooked. I give it to the dogs these days lol.

The only way to cook crispy bacon is in the oven (even heat), set the time, then cook your eggs etc to finish at the same time.

Clever - Yeah coz as the bacon shrinks in the pan the edges curl up and half the rind loses the surface contact required for optimum crispyness

The reason for speed being an over emphasized criteria in my cooking is - I usually cook this meal after I get home from fishing at around 8pm - so I'm freaking starving and there arent seconds to spare

Yeah my Grandma used to have 5 named kookaburra's that would visit her when she called them in - and I think if she were pressed, she might admit to liking them more than the grand kids So bacon rind was reserved for VIP's

Yabby bait? Cut the rind into 2" pieces and cook the rind by itself for a kick ass crispy snack.

Try it once and you will be hooked for life!
