Yeah I filleted a 5kg carp with this little paring knife the other day- It actually felt great using a short stiff blade. So much control around the rib cage compared to a long floppy knife.

edit - I just realised I've never known why a paring knife is called a paring knife so I googled it

Noun. paring knife (plural paring knives) A thin-bladed knife intended for coring and paring (peeling) fruit such as apples as well as slicing small ingredient it is majorly used for detailed & controlled cutting.
